Acacia honey is the most famous monofloral honey. It is loved by everyone, children included, because of its high percentage of fructose which makes it sweet, light and delicate. Its scent is floral, faint and very pleasing.
If you want to savour it with cheeses, you have two options. You can pair it by concordance, choosing a sweet cheese, such as fresh Ricotta cheese, or if you feel a little bit daring, you can pair it by contrast, choosing an aromatic and intense cheese, such as Pecorino romano cheese, to go with this delicate honey. Try them both for yourself.
Apicoltura Cazzola beekeeping only makes whole virgin raw honey that does not undergo any thermal treatment and keeps all natural properties and benefits unaltered. It is extracted by centrifugal force and then left to decant in honey ripeners and poured in jars. Nature at its most pristine.
