The aged ricotta salata is considered a dairy product and not an actual cheese, because it is made from whey, rather than from sheep milk. It’s a common ingredient in the cuisine of Southern Italy and it’s typically grated on top of traditional dishes for a little extra flavour kick. It pairs perfectly with tomatoes, aubergines and béchamel sauce.
The aged ricotta by Argiolas is organic. it has a compact and white paste obtained through a dehydration process activated by salt. Its more delicate taste makes it an excellent alternative to aged pecorino cheese, Grana padano cheese or parmesan to grate on top of your favourite dishes.
