This cheese is called Piave like the river flowing in the valley where this cheese is produced. The PDO Aged Piave Cheese Gold Selection is manufactured in the province of Belluno, on the borders of the Dolomiti Bellunesi National park. The milk used to produce this Italian excellent cheese, which has won many international awards, only comes from here. Furthermore, 80% of milk comes from local cattle breeds, such as the Pezzata Rossa or the Holstein Friesian cattle.
Five different types of Piave cheeses are produced, each one with different aging stages which consequently change the cheese colour, consistency and paste flavour. Aged Piave cheese ages for at least 6 months, while the aged Piave Cheese Gold Selection must age for at least 12 months.
While it ages for one year, the Piave cheese fully develops its sensory features, where the flavours and scents of the Dolomites forage herbs can be clearly perceived. The paste reaches a perfect crumbliness level and its flavour gets full and intense, but always sweet.
