The grape’s sweet and fruity note is prevailing, whereas the hint of bitterness, usually found in balsamic vinegar, is lacking here. It is a versatile and very pleasant sweet and sour dressing.
Officinae Defrutum makes this balsamic reduction from its own balsamic vinegar and grape must concentrate. It is a traditional recipe from Emilia-Romagna, which has now become a worldwide sensation.
The classic balsamic glaze is, just like the balsamic vinegar, free from added caramel colouring, which goes to show the undisputable quality of the finished product.
