

“Busiate” is a type of trapanese pasta with a characteristic flattened spiral shape. It is a very ancient pasta that owes its name to the busa, the stem of the plant that was used as a stick to roll it. The shape is brilliant to say the least, because it captures and holds all the sauce. The production is still entirely handcrafted and the raw materials used are of the highest quality.
The Russello durum wheat semolina, an ancient and almost forgotten variety, is very aromatic and low on gluten. It’s stone-ground, bronze-drawn and slow-dried, with low temperatures. DaSud’s Busiate are perfect for pasta alla Norma and with trapanese pesto, with tomatoes, pecorino cheese, almonds, garlic and basil. They are so good that even with a simple fresh tomato sauce they turn into an exceptional dish!
