The "peposo" is a typical Tuscan main course, similar to a stew but with different aromas and a strong note of pepper (hence the name "peposo"). This version is enriched with Casentino grey pork meat.
Also called "Peposo alla Fornacina", this delicacy was prepared by the workers of Impruneta furnaces, who placed the meat in bowls with pepper and wine, at the entrance of the furnace where the bricks commissioned by Brunelleschi for the construction of the dome of Santa Maria del Fiore in Florence were prepared.
Grey pork is a pork breed resulting from the crossbreeding of "Large White" female pigs and "Cinta Senese" male pigs. Grigio del Casentino rears pigs in semi-wild state on the slopes of the Casentino forest national park, in a splendid valley where they eat naturally and live in the open.
