Delicious pork steaks with fillet made from Casentino grey pigs, reared in the semi-wild on the slopes of the National park of the Casentino forests by the company I Commensali. Casentino grey pig is a swine breed resulting from the cross of “Large white” sows with “Cinta senese” boars.
These fresh steaks are ready to be grilled or seared in a pan. One advice would be to avoid salting them too much; the meat is already very flavourful and salting it excessively would end up covering its delicious natural taste. Its delicious flavour comes from the fat; since they are reared in the wild, grey pigs develop a high content of fat mass to protect themselves from the cold winter in Casentino; it is a good fat, though, that is unsaturated and not harmful to health and that enhances meat in a unique way.
The “grey pork T-Bone” is for real gourmets. You can taste the difference straight away: the meat is tender, but compact, flavourful, genuine with a great marbling that melts when it is cooked, enhancing the delicious flavour of lean meat.
