

Castelluccio di Norcia’s lentil, PGI since 1999, is an exceptional legume, with an ancient history and a unique taste. Its skin is thin and tender and this is a great advantage in the kitchen, because it directly allows cooking without soaking, greatly reducing the preparation times.
It is smaller than other lentils and its variegated colors make it immediately recognizable. Did you know that there are also lentils with tiger stripes? In addition, its production still follows traditional methods, in full respect of the territory and the rhythms of nature. Castelluccio’s lentil is the only legume that is not attacked by parasites and therefore its cultivation does not involve any type of chemical or pesticide.
How to use Castelluccio’s lentils in the kitchen? For a hearty single dish, which warms the heart, definitely a nice soup with cereals, vegetables and potatoes. For a tasty side dish, they’re perfect with tomato and a pinch of rosemary. For a more creative idea, try them also with curry. And then – it really goes without saying - with cotechino, for a real symbolic Italian dish at the table.
