Loin is one of the finest pork cuts, sourced from the back of the pig, one of the leanest and finest parts of the animal. We have selected the cured pork loin of Scarpaccia cured meats, a family business crafting artisan cured meats the traditional way in the middle of Casentino. Following local traditions and using exclusively Italian meat, this company’s cured pork loin has an unmistakable and delicious flavour.
The rind and fat are removed from the pork loin which becomes completely lean; then the loin is salted according to tradition. Scarpaccia cured meats also adds some aromas and spices to the mix, which give the meat a scent of undergrowth. Aging takes places in ventilated rooms, where the pork loin is properly massaged to let it soak all the aromas. At the end of the aging period, the pork loin is compact and dark pink.
Cured pork loin has a pleasant aroma and a slightly smoked flavour. To be able to fully enjoy it, we recommend cutting it into thin slices and pairing it with some salad and parmigiano shavings. The pork loin is also delicious with bread or as a starter. Scarpaccia cured meats offers allergen-free cold cuts which everyone can enjoy.
