Senatore Cappelli flour is ideal to make pasta, bread and flat bread. It is made from durum wheat which was obtained through selective breeding in Foggia, in the Apulia region, at the beginning of the 19th century. Its name is an homage to Raffaele Cappelli, a senator of the Kingdom of Italy, who supported experimental cultivations as per the land reform approved during the early 1900s.
Senatore Cappelli wheat is a coarse durum wheat which best grows on clay soils. The Senatore Cappelli flour is very high in protein; that’s why it used to be called ‘meat for the poor’ in the South of Italy.
