

Fabriano salami is a typical and very refined salami from the Marche region, whose mixture contains ham meat. Tomassoni makes this salami by hand and uses only Italian raw materials.
Salami is filled in natural casings and is left to age for at least 40 days. The colour of the salami slices becomes deep red dotted with white fat cubes. The meat is compact and very scented; it slightly smokes when the salami is briefly placed next to a hot chimney, right after the filling process.
This traditional salami from Marche is produced in the winter, between the months of October and March.
