“Grande Magi” is a limited edition cheese with a minimum maturation of 36 months, which can even last up to 6 years! It matures in Parmigiano Reggiano cheese caves, but it’s a completely different product. It is produced with cow and buffalo’s milk, for an astonishing result. It is much more than a simple cheese, we’re talking about a dairy work of art, a product of the highest quality.
The crust is very hard, with the De’ Magi Selection brand. The paste is hard and crumbly, without holes but with the characteristic tyrosine lumps from the prolonged maturing. The scent is beyond words: a perfect harmony of cooked butter, hazelnut, meat broth. In the mouth the taste is extremely balanced and persistent, salty but with a strong sweet note. It is simply consumed in flakes for a taste of pure goodness, buti t can also be added to pasta and any “au gratin” preparations.
