The company Sud Ovest makes grey mullet bottarga cured fish roe in the most fitting land - in Iglesias, Sardinia. Cured fish roe slabs - which are also sold whole - are ground and packed in a jar to always have some exceptional gold cured fish roe ready to grab.
The Sardinian tradition dictates that the mullet bottarga must only be made with flathead grey mullet eggs, whose ovaries have an outer coating more resistant to brining. Sud Ovest applies handmade processing methods and carefully selects all the ovaries which are then going to be salted and dried.
Bottarga cured fish roe is an actual culinary speciality as well as a traditional food product as declared by the Italian Ministry of Agriculture. It is a simple ingredient which will however confer the intense and unique flavour of the sea to your dishes. Ideal on pasta, it can also be used to replace salt as flavour enhancer. This bottarga has already been grated and is ready to use in any recipe.
