Honey is made from nectar, while honeydew is made from the sugary liquid secreted by insects as they feed on plant sap. It is basically a by-product for these small insects, but it is an essential source of food for bees which turn these secretions into a dark, thick and delicious honey.

If you purchase honeydew honey, do not expect a sweet and delicate honey. This honey has a strong and long-lasting flavour, a balsamic taste and a unique scent reminiscent of caramel.

It pairs very well with Castelmagno cheese or with Tuscan Pecorino cheese, which are strong enough to stand alongside this honeydew honey.
