It smells of cream and butter. its rind, with a surface mould, is very thin and white. it has a sweet taste with hints of fresh grass and a slight bitter note if you eat the rind too: we are talking about “Il Re”, the King of De’ Magi.
This “aristocratic and authoritarian” De’ Magi cheese is made with cow, ewe and goat milk. This mixture of three milks is what gives this cheese an unmistakable flavour and makes it an Italian variation of the French camembert.
“Il Re” is a cheese with a strong character that must be treated with respect and care: it is extremely soft - you can almost eat it with a spoon, it has a melt-in mouth-texture and a strong flavour when it is perfectly matured.
It is ideal for a cheese platter as well as in a risotto to obtain the perfect creamy texture.
