Delicious beef for mixed boiled meat from cows that are born, reared and slaughtered in Italy. Our supplier of fresh meat is Massi, the owner of the company I Commensali. His butchery was founded after his previous experience in cattle breeding farms. Massi’s meat is perfectly matured; that’s why it is so tender and flavourful and nothing short of excellent.
The mixed boiled beef will include in varying proportions: ribs, belly, tongue, leg, the back part of the shin and the beef clod, when available.
There are two different boiled beef dishes in Italy; in the first one, called lesso, the meat is plunged into cold water, whereas for the second dish, called bollito, the meat is plunged into boiling water with celery, onion and carrot. By doing so, the beef can preserve its flavour and cooks for maximum two hours. In the case of lesso, the beef releases all its juices in the water: that’s why it is the perfect technique to obtain a delicious broth.
