Lavender honey is one of the most difficult honeys to make, since lavender has a low pollen yield. However, when it is properly made, it tastes incredible. It is an exceptional, refined and very delicate product with a complex flavour full of nuances.
It pairs very well with Pecorino cheeses. The flavour of cheese, which is sapid and intense, creates a beautiful contrast with the lavender honey with its sweet and delicate taste, and, hence, a perfect balance.
Apicoltura Cazzola beekeeping only makes whole virgin raw honey that does not undergo any thermal treatment and keeps all natural properties and benefits unaltered. It is extracted by centrifugal force and then left to decant in honey ripeners and poured in jars. Nature at its most pristine.
