The “tondino bianco” beans, with their delicate flavour and their unmistakable sweet taste, suit all kind of recipes. Besides the flavour, two main features make them stand out from other beans: a thin skin and a high percentage of protein. The area in which they are cultivated has a good day/night temperature excursion during the summer and that’s what makes them such a unique culinary product.
Thanks to its thin skin, cooking the tondino bean is easy and doesn’t require too much time, while the bean stays hard and compact. “Tondino bianco” is a variety - or ecotype, also known as “risone” for its round-oval shape and its homogenous white colour.
