

Classic side dish belonging to the Tuscan cuisine, ‘fagioli all’uccelletto’, i.e. Cannellini beans in tomato sauce, probably take their name from a peasant dish that involved cooking birds on a skewer with sage and bread pieces. Since these beans are also cooked with plenty of sage, they are called ‘all’uccelletto’ from the word ‘uccello’, Italian for birds. According to the traditional recipe, Cannellini beans are cooked in a clay pot together with tomatoes, sage, salt and pepper.
