

The Parmigiano Reggiano aged 60 months is one of Gennari’s cheeses with the longest aging period. The 60-month parmesan has an intense flavour with a rich range of aromatic elements, without ever being spicy.
While it ages for five years - which is a very long time demanding a deep passion and respect for this job -, this Gennari parmesan develops a paste with a grainy texture, which is perfect to make cheese shavings. It tastes amazing in combination with a swirl of acacia honey.
This parmesan cheese is manufactured following the same principles of the whole Gennari cheese production: Italian milk from the company cattle, low salt and rennet content and a long aging period.
According to PDO provisions, cheese portioning takes place within the Gennari manufacture. Cheese wheels are cut, vacuum-sealed and packaged within a short period of time, to prevent the loss of sensory properties.
