

PDO Gorgonzola is a cheese made from cow’s milk with a raw and soft paste.
Gorgonzola is probably one of the most famous Italian cheeses in the world, even though it was first produced in the valleys in Lombardy. The strong ties linking a product with its territory are of great importance for the company Carozzi: local people, places, their stories and experiences all contribute to shaping a cheese’s identity.
Mild Gorgonzola cheese is the most beloved Gorgonzola type. It is creamy and, although it is called mild, it has a rather intense flavour; it tastes exceptional spread on a slice of bread or in many recipes: pasta or risotto dishes, sauces for meat or fillings for many different quiches. Its melt-in-the-mouth texture is truly one of a kind.
The Carozzi Gorgonzola cheese is produced by experts with the utmost care, in order to obtain an ideal marbling which is not too overwhelming to the palate.
Gorgonzola cheese ages for over two months; it is the last processing step which takes place in the Val Taleggio valley.
