PDO traditional balsamic vinegar of Modena “Extravecchio” (extra old) is a product for connoisseurs and real lovers of the black gold of Modena. It is only made from acetified, cooked Lambrusco and Trebbiano grape must from Modena. In compliance with product specifications, the vinegar is aged in refined wooden barrels in Officinae Defrutum’s vinegar cellar.
PDO traditional balsamic vinegar of Modena “Extravecchio” ages for at least 25 years. During the aging period, it is gradually poured from bigger barrels into smaller ones. As it is poured over and over again, the liquid becomes more concentrated and aromatic through a natural fermentation and evaporation process.
This traditional balsamic vinegar has a nice creamy and velvety texture. It has a persistent scent and a pleasant sweet-and-sour flavour with no bitter notes. It is ideal drizzled on smoked salmon, pasta and risotto dishes, fish and meat cooked in several ways, ice cream, dark chocolate and strawberries.
