Penne are one of the most famous pasta shapes; however, “Pastificio dei Campi” doesn’t make normal Penne, but Pennoni from Gragnano PGI. Pennoni are big furrowed penne which can perfectly hold sauces. The company “Pastificio dei Campi” is located in Gragnano in the region Campania, where pasta production has been taking place since the 16th century thanks to the mild and slightly humid climate. In 2013 Gragnano obtained the PGI origin certification.
This company makes PGI Pennoni from Gragnano only from durum-wheat semolina grown in its own wheat fields in Apulia; the pasta is then extruded through bronze dies - as the PGI product specifications state -, leaving a rough pasta surface which can perfectly absorb sauces. Pennoni are then left to slowly dry at set temperatures. “Pastificio dei Campi” attaches special importance to artisan tradition; that’s why production is hand-made and takes place entirely in Italy; it is also traceable, guaranteeing the utmost transparency. What’s more, packaging is made of recyclable materials, in order to minimise the environmental impact of their products.
Pennoni by “Pastificio dei Campi” go perfectly with veggie sauces. Please keep in mind that they need more water to cook, due to their size.
