This PGI balsamic vinegar of Modena ages for sixteen years in barrels in the Officinae Defrutum’s vinegar cellar, located in Magreta, in the province of Modena. The “8 corone” variety has a minimum density of 1.32 and a 6% acidity. The PGI balsamic vinegar of Modena does not contain added caramel colouring, as stated in its product specifications, but it is only made from cooked grape must and wine vinegar.
The 16-year aged PGI balsamic vinegar of Modena has a nice, dense and syrup-like appearance. It has a perfectly balanced sweet and sour note which brings out the fruity and woody flavour.
The “8 corone” variety is ideal to dress sweet and savoury dishes alike. This great Italian delicacy pairs exceptionally well with soups, pasta or risotto dishes, cooked and grilled vegetables, salmon, boiled or roasted meat, cheeses, as well as desserts like custard ice cream, fruit salad and panna cotta.
