

Porchetta - pork roast - is one of the gastronomic symbols of Casentino. The Grey meat kind respects the most traditional recipe and is prepared with the liver of Casentino Grey Pork, which becomes soft and juicy while cooking. The outer rind is crisp, the central part, composed as well as the liver from arista and rigatino, creates the perfect combination of aromas, flavours and textures.
Flavoured with wild fennel seeds and flowers, the Casentino Grey Pork Roast is perfect cold, in a nice sandwich or at room temperature, “on a plate" along with a side dish. You can feel this meat is exceptional at the first bite: pigs, grown in nature without artificial food, make an incredibly good and tasty meat.
All of Grigio del Casentino’s products are healthy, genuine, authentic and sustainable. The pigs, which are slaughtered when they’re at least 14 months old, live in the semi-wild state in the woods of Casentino, where they feed on what nature offers. The preparations follow the ancient recipes, without preservatives, dyes, nitrites, nitrates, artificial flavours or thickeners.
