As a matter of fact, the prized white truffles used to make this delicious cream are selected and foraged in the wild; they are then cleaned and they undergo a further selection. Remember: white truffles, in both whole and cream form, cannot withstand high temperatures and should not be cooked or they will lose their wonderful aroma!
