Quader de Cavra is a washed rind goat milk cheese. It has the unmistakable taste of goat’s milk and an intense scent. The 35 days maturation in pine wood crates gives it an even deeper aroma. It has a soft texture and an enveloping taste, perfectly balanced between sweetness and acidity.
Awarded with the World Cheese Awards medal in 2013, this cheese is already superb by itself, just the way it is. You can simply combine it with cereal bread, pears, nuts or honey, but it gives its very best on risotto or on pasta. If you want to go for a dish that is a true hymn to Lombard tradition, try the Quader de Cavra cheese with “polenta concia” (buttery polenta), it’s a real treat!
The company’s story starts in 1960, when Aldo Carozzi began to trade its products in Valsassina. After more than 60 years, the precious craftsmanship of Lombard dairymen have merged with innovative productions, which meet modern tastes and allowed Carozzi cheeses to be appreciated even abroad. Modern interpreters of an ancient tradition, Carozzi cheeses represent a perfect blend of history, territory, taste and craftsmanship.
