The PDO red cow Parmigiano Reggiano cheese by Gennari is not like traditional parmesan cheese, because it is only made from the milk of red cows of the Reggiana breed. What is remarkable about this cattle breed is that red cows produce a third less milk than the more common Holstein Friesian cows, but their milk contains more casein. What does that entail? The casein protein is essential to transform milk into cheese, because it allows a longer cheese aging period, thus making the cheese easier to digest.
But that’s not all. The end result is red cow parmesan: a sweet, delicate cheese with an intense aroma even after 24 months of aging.

According to the PDO provisions, cheese portioning takes place within the Gennari manufacture. Cheese wheels are cut, vacuum-sealed and packaged within a short period of time, to prevent the loss of sensory properties.
