    The handmade Provoletta cheese by Perrusio has a pleasant sweet taste and an unmistakable smoky aroma. Only prime-quality milk is used for this cheese which is made exclusively by hand; the same applies for any other cheese manufactured by this incredible dairy.

    This little sphere can be cut into either thin or thick slices according to taste. The stretched curd is compact and ideal to dice to use as filling or to enrich vegetable or pasta salads. 

    We think that smoked provola is one of the best cheeses from Campania to melt on pizza, second only to “fior di latte” mozzarella.
