

This amazing stracchino cheese is called “Gocce di Rugiada” (dew drops in Italian) and it’s a fresh, soft and spreadable cheese, with a sweet and buttery taste. Its name tells his story: “stracco” (Italian for tired) like the cows, tired from the long journey back from the alpine pastures to the plains. This stracchino truly is a delicacy, with a velvety texture, a scent of fresh milk and an absolutely unmistakable taste.
The processing is traditional and does not allow preservatives. If you want a taste of the art of Lombardy cheese, spread this stracchino cheese on a slice of bread, but if you’re in the mood for a much more hearty dish, melt it on hot polenta. For an outstanding platter, serve it with pear jam or, if you want to bring a bit of Tuscany on your table as well, pair it with raw ham and some fried buns.
The company’s story starts in 1960, when Aldo Carozzi began to trade its products in Valsassina.
