




Taddei’s Taleggio cheese is made from pasteurized milk - sourced from farms which are certified for the production of PDO Taleggio cheese - salt and rennet.
Taleggio is a raw-paste cheese with a washed rind (which is edible). During the ripening process, the rind is sponged with salt and water to manage the moulds developing on the surface. Moulds are fundamental for a high-quality ripening called ‘centripetal’ - i.e. going from the rind to the inner part of the cheese - which lasts more than two months.
The paste is soft, with a white straw yellow colour; it is uniform and compact, but also has a melt-in-mouth texture. Its scent reminds of undergrowth with a truffle aftertaste and a medium persistence.
