Tuna cured fish roe, also called bottarga, is a Sicilian specialty with a genuine and intense flavour. Traditional tuna cured fish roe can either be grated or packed in oil, which makes it ideal for bruschetta or pasta dishes.

Marzamemi is a village home to many historical tuna fish factories, whose livelihood is thus intertwined with the preservation of this fish.
