White truffles taste best when eaten au naturel or with animal fats, such as butter, cream or soft cheeses. Remember: white truffles cannot withstand high temperatures and should not be cooked or they will lose their wonderful aroma! When sliced thin over fried eggs or on top of tagliatelle with some alpine butter, they are a delicacy second to none.
Located on the Umbrian hills, next to the city of Spoleto, Alfonso Fortunati Truffles is a wonderful company which still handles truffles by hand, without adding any artificial aroma and only using first-class raw materials requiring a great deal of care and gentleness.
