Yellow Plum Tomato Sauce - 250gr

Yellow plum tomato, the so-called “pomodoro datterino”, is the sweetest of the tomatoes. Imported to Europe at the beginning of the sixteenth century and initially used only for ornamental purposes, it seems that the Italian name “pomodoro” is due to this variety. In fact we could say it is a “pomo d’oro” (golden knob)!

It’s not just the intense colour that makes it a precious delicacy. Sweet, delicate and without acidity, this two-ingredients sauce (yellow plum tomatoes and salt) is perfect for seasoning fresh or stuffed pasta, but also as a sauce for fish. There’s no doubt that plum tomato is perfect by nature. However, if this sauce is so good it is also thanks to the women of Casa Iuorio, who collect the tomatoes when they are perfectly ripe and prepare them by hand in the laboratory next to the fields.
